Strawberry Coffee Cake

  1. Preheat the oven to 400˚F. Lightly grease a 9-inch springform pan with cooking spray. Set aside.
  2. In a medium mixing bowl, whisk together the flour, sugar, baking powder, and salt. Set aside.
  3. In a large mixing bowl, combine the egg, half and half, vanilla, sour cream, and vegetable oil. Whisk until thoroughly incorporated.
  4. Using a spoon, stir the flour mixture into the egg mixture; stir just until combined.
  5. Gently fold 1 cup of strawberries into the prepared cake batter, trying not to break up the fruit.
  6. Pour the batter into the prepared cake pan. Top with remaining strawberries and pecans. Sprinkle the top of the cake with raw sugar and cinnamon.
  7. Bake for 32 to 35 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  8. Remove from the oven and transfer the cake to a wire rack. Leave in the cake pan for 10 minutes.
  9. Remove the sides of the springform pan and let the cake cool completely before cutting and serving. YOU MUST LET COOL COMPLETELY BEFORE SLICING! TRUST ME, IT'S WORTH THE WAIT.
